The short answer
Yes, if three things line up: your passport allows entry to the UAE, your bags are checked through (or you are happy to store them), and your layover is six hours or longer. Zayed International is fast to clear, which makes Abu Dhabi one of the easiest places in the world to use a layover well.
1. Your passport
Leaving the terminal means entering the UAE, and the same federal rules apply as in Dubai. Many nationalities receive visa-free entry or a visa on arrival; others must arrange a visa before travelling; the home carrier may offer a stopover visa for its own passengers. Check the official UAE entry rules or ask your airline. (VERIFY nationality lists and any stopover-visa scheme before publishing.)
2. Your bags
If your luggage is checked through to your final destination, you walk out with hand luggage only. If you have to collect it, factor in the carousel wait and either take it with you (a taxi or pre-booked car handles standard bags) or use the left-luggage service in the terminal.
3. Your time
Six hours is the practical minimum. Immigration in both directions, a 15- to 40-minute transfer each way and a 90-minute return buffer take about three hours out of any layover; the rest is yours.
What to do with it
- The Sheikh Zayed Grand Mosque is 15 to 20 minutes from the airport and the single most rewarding stop in the emirate. - Saadiyat Island for the Louvre Abu Dhabi or a beach club, 25 to 35 minutes away, on layovers of 8 hours or more.
- Private Dining on the Corniche or at a hotel restaurant for an evening layover: a reserved table, a set menu and a return transfer booked for the right time.
What not to do
Dubai. It is about an hour and a quarter each way from AUH, which turns a 10-hour layover into a car journey with a short stop in the middle. Under 10 hours, stay in Abu Dhabi; the city is quieter, closer and just as memorable.
Back at the airport
Be at the terminal 90 minutes before departure. Zayed International is large, but security and the walk to the gate are quick; the buffer is for the unexpected, not the expected.
